Alien signal through rock and concrete walls?

I am currently in the process of renovating a 300 year old colonial house in Mexico to use as a vacation rental. The house is 10 meters wide by 57 meters deep and has concrete and rock walls that are about 60 centimeters thick. I am looking for a good WiFi solution that will minimize the number of access points but also cover the entire house.
I would like a mesh network that covers the entire house and guests will not have to log in multiple times if they move from one end of the house to the other.
I think the AmpliFI Alien might fit the ticket but I have not been able to figure out how many access points can attach to 1 router. Or if the signal will penetrate the walls effectively.
Any advice here?
Construction is at the point where I can add cat6 or fiber runs throughout the house if needed.
